What is Gunpowder / Podi?
Gunpowder or traditionally known as milagai podi (also spelled mulagai podi), is a classic South Indian dry spice blend made from roasted lentils and dried red chilies. It is most commonly served with idli and dosa, where it’s mixed with oil or ghee to create a flavorful, spicy paste as an accompaniment.
Unlike chutneys or sauces, podi is completely dry - making it easy to store, travel-friendly, and naturally long-lasting without refrigeration. Its texture is slightly coarse, and its flavor is layered: nutty, spicy, and deeply aromatic.
